On Tuesday, August 19, Elawa Farm welcomes Chef Tom of the upcoming Evanston restaurant Burl—created by Chef Tom Carlin and Rachel Canfora-Carlin, for a one night only, field-to-fork feast set on Elawa’s historic Lake Forest estate. This special evening will highlight the best of the season, beginning with a welcome cocktail and followed by a five-course menu featuring grilled flatbreads with eggplant and peaches, country ham terrine, Burl’s achar-roasted carrots, grilled Catalpa Grove lamb with mole verde, and a summer fruit crostada with honey ice cream. Guests will enjoy an early taste of Chef Tom's seasonal, produce-driven cuisine ahead of the restaurant’s 2025 debut—an experience rooted in local farms, creative collaboration, and the spirit of summer.
